Hidden inside an unassuming building in Reykjavik, Iceland’s capital city, one can find Chef Gunnar Karl Gislasson hard at work in the kitchen of his Michelin Star restaurant, Dill. Dill is Iceland’s only Michelin Star restaurant and it more than lives up to the hype. Featuring dishes made from unique Icelandic flora and fauna, the multi-course menu changes seasonally. Each dish is perfectly paired with wine or, my personal pick, locally crafted kombucha. A culinary explanation or a story of where and how the ingredients were obtained accompanies every plate. For example, one will learn that the kombucha served with each dish is made in the garage of one of Gislasson’s close local friends. One may also learn about where Gislasson went foraging earlier in the day for the ingredients in his recipes. In short, Dill is an essential stop for anyone who loves a unique local experience. The time you spend savoring each dish will become a core memory. Your taste buds will forever thank you.
